Oven baked fish with a pesto crust
ingredients:
makes 4 portions
- 4 hake fillets, about 200g each or any firm white fish, SASSI green listed
- 4 tsp Thai pesto, heaped or any of the 6 Pesto Princess flavours
- Pecorino cheese, 50g grated optional
Directions
Preheat oven to 220 degrees Celsius.
Using a little olive oil, grease a baking tray and arrange your fish fillets on it.
Spread a generous teaspoon of pesto onto each fillet.
Divide the grated cheese between the 4 fish fillets, sprinkling it over the pesto
Bake for 10-12 minutes, depending on the thickness of the fish.
Hint: when you think the fish still has a minute to go, it’s ready… it tends to continue cooking for a bit once removed from the oven.
The cheese should be golden, and your fish, succulent.
Serving Tip:
Serve with thin strips of raw baby marrow which have been marinated for 10 minutes in olive oil, lemon juice, and a little salt.
